French onion, bacon and cheese Cobb dip
If you LOVE a cob (let’s face it, who doesn’t?) then this needs to be your new go to recipe.
I whipped up this bad boy the other week for a gathering with friends and it was an absolute hit. Super easy to make, super cheesy and goes well with veggie sticks if you want to be a bit healthier. The recipe is originally from Taste– my favourite place to find recipes.
Ingredients
- 1 teaspoon olive oil
- 150 grams of short cut bacon, finely chopped
- 1 red onion, halved, thinly sliced
- 375grams cream cheese, softened
- 1/2 cup mayonnaise
- 1/2 cup (60 grams) grated tasty cheese
- 40g packet of French onion soup mix
- 1/4 cup chopped chives
- 450g coles bakery white Cobb loaf
- chopped chives to serve
- veggie sticks to serve
Method
- Preheat oven to 180C. Line baking tray with baking paper.
- Heat oil in a medium heat in a frying pan. Add bacon and onion and cook, stirring, for three minutes or until the bacon starts to brown. Once browned, transfer to a plate lined with paper towel to drain.
- Combine the bacon mixture, cream cheese, mayo, tasty cheese (I add a bit of extra cheese because I LOVE cheese), soup mix and chives in a large bowl. Season.
- Use a serrated knife to cut 4cms from the top of the cobb loaf and put aside. Remove the bread from the centre of the loaf, leaving a 2cm thick shell. Tear bread pieces into 3cm pieces. Spoon the bacon mixture into the shell. Top with the lid. Place on a prepared tray. Arrange bread pieces around the Cobb. Bake for 20 mins or until golden.
- Sprinkle with extra chives and serve with veggie sticks if desired.
Note: I accidentally ripped up the lid before baking as I didn’t read the recipe properly. If you make my mistake, just wrap up the Cobb alfoil (making sure the top is covered) and cook until the mixture is hot. I cooked it for approx 20 mins and left it uncovered for another 5/10 mins.
