Raw Carob, Mint and Fig Bliss Balls
Ingredients
- 1/2 cup medijool dates
- 1/3 cup all natural peanut butter
- 1.5tbps coconut oil, melted
- 2/3 cup almond meal
- Handful of almonds
- 1/3 dried figs
- 1/3 cup The Carob Kitchen raw carob powder
- 1 tablespoon chai seeds
- Dash of peppermint essence
- Desiccated coconut to roll balls in
Method
- Put all dry ingredients into a food processor and blend until ingredients form a powder. It can be a little chunky, this just adds texture.
- Add the remaining ingredients and process until combined.
- If the mixture is too wet, add some more almond meal. If it’s too dry I like to add some more peanut butter.
- Roll into balls, roll in the coconut and place in the fridge to cool. Perfect for a on the go snack or to keep the choccie cravings at bay!
